Summer obsession salad

  Why 'summer obsession' salad, you may wonder. Well, simply because this was my obsession last summer, I literally had this salad, for lunch, every single day of the week. I would look at the clock, and as 12:00 was approaching, a tremendous feeling of joy would wash over me at the thought of having this beautiful salad for lunch! With a piece of toasted bread, it was a delight! The raw carrot strips lend just the perfect touch of crunchiness and sweetness to this salad while the avocado makes it slightly creamy. And dreamy! I hope you like it too.

Ingredients (serves 2)
- 1 bunch mixed greens (chicory, spinach, arugula, baby lettuce) or your favorite type of lettuce
- 1/2 avocado
- 1/2 English cucumber/ 1 garden cucumber
- 1 carrot
- a handful kalamata olives
- 1 garlic clove, mashed
- 1 tablespoon chia seeds
- 3 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- salt and pepper

  Place the lettuce in a large bowl. Using a vegetable peeler, cut the carrot and the cucumber into thin strips. Carefully slice the avocado and add it to the salad, together with the olives, the mashed garlic and chia seeds. Add salt and pepper, apple cider vinegar and olive oil. Enjoy!
