Spiced up potatoes



This is a delicious side dish you can prepare ahead of time. Simply boil the potatoes, place them in the baking dish and pop them in the oven just before your guests arrive.

Ingredients (serves 6)
- 6 potatoes (preferably red), diced
- 3 Tablespoons extra virgin olive oil
- salt and pepper, to taste
- 1 Tablespoon paprika (you can use hot paprika if you prefer)
- 1 Tablespoon cumin
- 1 Tablespoon garlic powder
- 1 teaspoon onion powder

Bring a large pot of salted water to a rolling boil and, using a slotted spoon, add the potatoes. Boil for 5 minutes or until fork tender, then drain. Coat the bottom of a baking dish with some olive oil, add the potatoes, drizzle with the remaining olive oil, season with salt and pepper, and toss gently. Roast at 400F until some edges start to crisp. Meanwhile, combine the paprika with the cumin, garlic and onion powder. Add the spice mix to the potatoes, combine well and return to the oven for a few minutes, until the spices make a nice crust (about 5-7 minutes). Enjoy!
