Maple glazed Brussels sprouts with toasted walnuts


You can serve these delicious maple glazed Brussels sprouts as a side dish or as an ingredient for a pretty, colorful and nutritious Buddha bowl!

Ingredients (serves 6-8)
- 2 lb Brussels sprouts, trimmed and cut in half
- 3 Tablespoons maple syrup
- 3 Tablespoons balsamic vinegar
- 3 Tablespoons extra virgin olive oil
- sea salt and freshly ground pepper, to taste
- 1/2 cup walnuts
- a handful dill, chopped (optional)

In a large bowl mix the maple syrup with the balsamic, olive oil, salt and pepper. Add in the halved Brussels sprouts and toss gently until evenly coated. Transfer to a baking dish and roast at 400F for about 30 minutes (or until fork tender), stirring a couple of times. Place the walnuts on a baking sheet and lightly toast at 375F for about 4 minutes or until golden and fragrant (do not keep them too long as they will rapidly burn). Add the walnuts and dill (if using) to the Brussels sprouts and serve. Enjoy!
