Tofu bolognese




This is a delicious, easy to make pasta sauce. Use a non stick pan if available, as the tofu has a tendency to stick to the bottom of the pan. If you don't have a non stick pan and the tofu sticks to the bottom, just add the marinara sauce and scrape it off using a wooden spoon (do not wait until the crust burns though).

Ingredients (serves 6)
- 1 large white onion, minced
- 3 garlic cloves, minced
- 1 red pepper, finely chopped
- 1 block 500g extra firm organic tofu, rinsed and patted dry
- 4 cups marinara sauce
- 1 Tablespoon oregano
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon freshly ground black pepper
- 4 teaspoons Tamari sauce
- 3 Tablespoons extra virgin olive oil
- sea salt, to taste

Heat the olive oil (preferably in a large non stick pan) and add the onions, garlic and red pepper. Crumble the tofu with your hands and add it to the pan. Cook until tofu starts to turn golden, stirring often and continuing to break the tofu into small pieces using a wooden spoon. In a little bowl, combine the garlic powder, onion powder, black pepper and tamari and add it to the tofu mixture, stirring until evenly coated (about 30 seconds or so). Add the marinara sauce and oregano and simmer until heated through. Taste and adjust the seasonings. Serve over your favorite pasta and enjoy!
