Easy baked fries


This is the quickest, easiest and tastiest way to prepare French fries! This method of preparation uses only a little bit of oil for a quite large quantity of potatoes. I like to use yellow potatoes but red ones would work just as well. Keep them simple by seasoning them with just a bit of sea (or Himalayan) salt and pepper, add your favorite spice mix or try Nicole's seasoning, all options are delicious! Consider one large or two medium size potatoes per person and try to slice them to equal thickness to make sure they all cook evenly.

Ingredients (serves 6)
- 10-12 medium size potatoes, washed, peeled and cut into matchsticks
- 2-3 Tablespoons extra virgin olive oil
- sea salt and freshly ground black pepper

Nicole's seasoning, makes 1 serving (optional) 
- 1 teaspon garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano

Place the potatoes on a parchment lined baking sheet and add the oil in the middle. Using your hands, gently toss to coat each and every piece of potatoes, then spread them in a single layer. Roast at 400F for about 25 minutes or until a fork easily pierces the potatoes. Remove from the oven, sprinkle with salt and pepper and Nicole's seasoning (if using) and enjoy!
